Shifts that cross midnight

A shift starting at 18:00 and ending at 02:00 is recorded as one working day rather than split across two dates, so the hours read correctly and an in-progress session is not mistaken for a missed clock-out.

Rotas that change every week

Working times are assigned per weekday and per employee, so a rota that differs between front of house and kitchen does not need a second system to describe it.
